[INTTEST-95] Jobs that transfer journal from old versions to new ones need to be updated due to segmented journal

With the move towards segmented journal being the default plugin, journals cannot be transfered from old leveldb plugin to new one directly like in this job:

One option would be to capture a snapshot via jmx for all shards prior to shutting down karaf and move only snapshots. This would still test whether data is present after upgrade even with non compatible journal plugins.
